Currently have the Corsair TX750W running my two cards but should I get a bigger one like a Corsair 1000W or 950W? Since Fermi is coming I might sell my two cards and get a GTX 480. Just wondering if it will be enough to handle it.

You'll be fine. There is no way a single GTX480 is going to need more power than you can supply with that PS. Unless it is a 4 slot solution that requires 4x8pin power adapters and 2 PCI-e slots.

Besides, your CPU is pretty power efficient for what a beast it is and you're already running SLI 285's which aren't exactly teatottlers in the power department.

GTX480 uses one 6-pin PCIe and one 8-pin PCIe connectors and it cannot draw more power than a pair of GTX285s.

Your TX750 is pretty enough to handle one GTX480.

the gtx480 uses 295w, that is far less than 2x gtx280 and similar to 1 gtx295, you should be fine.

As everyone has said, you will be fine. Those 750's are beasts.
