So if I take a sapphire 7950 with boost up to 1200mhz on the core, does it still boost beyond that or am I effectively killing the boost? Or is the 1200mhz on the core people are referring the actual boost level?

I believe it will boost beyond that. I know it does with the Nvidia cards at least.

If I have a standard clock of 1050Mhz and a boost of 1150 and overclock by 50Mhz, the card will then hit 1200 under boost.

Edit.It appears that this is not the case with AMD.

I am pretty sure boost is completely disabled when overclocked, or otherwise it may cap at the old boost settings.

Boost is just a set number, e.g.:

850 regular, 950 boost.
NOT 850 regular, +100 boost

So if you set it to 900, then it will either be 900 or 950 under "boost", not 1000.
