I'm looking through MSDN's operating system list and I see

Windows 7 Professional N

What is it?

So it's the same thing without WMP. Can I just install it afterwards?

Yes you can install it afterwards, it was just removed due to EU licenses I believe.

If you're browsing MSDN I see no reason not to get another version as there should be no reason why you'd need to install Windows 7 N.

Yep, you can install WMP if desired. I believe MS removed it because the EU was giving them a hard time about it

EDIT: Apparently I'm a bit late to the game

Yes they make a Media Pack, download from the windows website that adds a few things like Windows Media Player ect.
