I know that these cards stay pretty damn cool, I've noticed personally a ~20*c difference between my reference 580 and DCUII 580.
Why not give it a try though, either use a temp gun if you have it, or one of those AUX motherboard temp sensors and put the unpainted sink on the vram and measure temp. Then paint it, and put the sensor back in the same place and measure temp again. See how it turns out.
