I wonder because I have a Blu-Ray player, and on my 1080P tv, most movies fill the screen. When I tested my 1680x1050 screen with the same player/movie, there were massive bars on top and bottom indicating an ultra wide aspect ratio.

What aspect ratio/res are these being outputted at?

Is that universal? Are you sure?

I think this may be true. I didn't check if it was cropping on my big screen, so perhaps that is it.

1.78:1
1.85:1
2.35:1
2.40:1

These are the most common, though they will vary movie to movie. Newer releases will be either 2.35 or 2.40, some older movies will be 1.78 or even 1.66 (A Clockwork Orange for example). It will give you the aspect ratio on the box. If you don't like 2.4, use the zoom to force 1.778.
