I have seen in stores some cpu's that had these specs:
P4 skt 775 fsb 533mhz 3.0ghz
P4 skt 775 fsb 800mhz 3.0ghz
Wich would be the best overclocking cpu?

533 mhz would be best. It's easier for your mobo to handle the lower starting FSB, giving you more headroom.

Umm no... it wouldnt matter. If you get a board that is "Presscott ready" It will overclock just as well. Your default FSB has no bearing on overclocking

So , would the 533mhz fsb and the bigger multiplier, get to 800mhz , like the other cpu?

Right well I don't know all that much, that's just what I've read round these forums.. lower FSB is better for overclocking.. *sigh*
