As far as I have seen, Windows 7 will boot from wherever it is installed.
In my case, I have a triple boot option with Ubuntu 9.04, Vista x64 and Windows 7, each on a separate partition in my RAID0 array. Windows 7 is on the 2nd partition.

For Dual boot (or triple boot, in my case), booting works as follows:

In GRUB, you will have the "standard" 3 rows for Linux. Then, you add the 4th entry for Windows, which will direct you to the standard MBR screen, where I select either Vista or W7.

I have the 4th entry as default in GRUB and Vista as Default in MBR, so if I leave it boot automatically, it will go to Vista.

Once I get home I will post my menu.lst entry
