I just built a new system this week (switching from Intel to AMD to try them out). My components:

Asus M5A99X Evo R2.0
Fx-6300 Vishera
8GB(2x4GB) Crucial Ballistix Tactical 1866
Samsung 840 Pro SSD
Gigabyte GeForce GTX 660
Windows 8 64-bit

First of all, in the UEFI BIOS, my Samsung drive does not have trhe UEFI label in front of it. I decided to ignore that and continue with my install. Running Diskpart in Windows 8 command line I converted it to GPT and tried to install. However, when I create the partitions it only made two (MBR not GPT). So I cancelled the install and played around with the BIOS settings some, specifically the CRM and Secure Boot options. Nothing I do gets the BIOS to recognize the Samsung 840 Pro as a UEFI capable device. In fact if I set it to only boot from UEFI devices, with no legacy support, it will not even see my Samsung SSD on boot and go straight to the BIOS with a message about how the SSD is not capable with the current boot settings.

Anyways, I've sent in a support ticket to Asus, but I thought while I wait I would hit up the community more familiar with AMD to see if you guys have dealt with this before or not. Thanks in advance everyone.

Solved my issue. As I suspected it was simply a matter of not being very familiar with this new technology. So in the interim of waiting for a response from Asus I had a thought and tried it out, and surprise it worked.

Just as a recap, for anyone else that might run into this too, I was confusing the idea that my SSD needed to have the UEFI label and not the drive I was booting from. Once I realize that, I simply opened the boot menu after inserting the Windows 8 DVD and selected the UEFI DVD drive. Originally I was thinking that the UEFI firmware needed to recognize the SSD as UEFI before trying to boot Windows, and that Windows would then auto select the mode to boot into. That assumption was incorrect.

Anyways, lesson learned. I'll create a thread of my build details over in the builders section for those interested. Happy computing.
