are you talking lowest latency sensor? I think most are in the range of 'not a big deal'.
consider shape and button feel and build quality and other things over 'lowest latency', because with current Good Sensor mice, they're all really close to one another.
you can use the mouse suggestion thread if you want to be more specific, it has a template to fill in.

logi's wireless mice are faster than many wired mice
and my diy wireless mouse is faster than logi's wired mice
just beware some sensors have turn up lots of smoothing at high dpi

unfortunately, most mouse reviewers don't test latency, and the ones that do at best measure it relative to some other mouse with an unknown baseline.
