I am having the same issue. While the game seems to be running at 5760x1080 the outside monitors are simply black, though I can see notifications and what not on them. Surely it is going to come down to driver support or simply a patch. I am not getting crossfire either.
 
Actually, the problem has nothing to do with the fact that it's a TWIMTBP title. As regards most games are concerned, they only see one monitor when 3 monitors are spanned using either Eyefinity or NVidia surround.

The problem with Assassin's Creed 3 is that the game forces a 16:9 Aspect Ratio meaning that any other aspect ratio (16:10, 4:3, or ultra widescreen formats like an Eyefinity or Nv Surround setup) will be letterboxed if too high or pillarboxed if too long. That's why if you have 3 16:9 monitors (like 1920x1080) you will only see the game on the middle screen since the rest is pillarboxed. I have 3 16:10 monitors which means I can actually see a small bit on both side monitors with the rest being pillarboxed.

Funny thing is that, according to this article, Ubisoft said they'd have proper multi-monitor support at launch. They obviously failed to deliver

Now that we know what the problem is, hopefully somebody with real technical knowledge in this field can make a Flawless Widescreen repository for this game since I want to play it properly on my Eyefinity setup

I have three 1920x1080 monitors and I was able to run surround mode without any problems.

Do you use Nvidia Surround or Eyefinity? Nvidia Surround users seem to be having more luck with it than Eyefinity users which in my head doesn't really make much sense because I always thought that the game just sees the one resolution when all monitors are in surround mode (with both Eyefinity & Nv Surround), regardless of how it's setup, etc...
 
What rene13cross says is correct. My monitors are 16:10 and there is no setting where we can change that in-game.

I am able to select 4800x2560 or 5160x2560 but both resolutions are letter-boxed so only 3/4 of my screen real estate is covered (two black bars on the left and right side about 2 inches thick!

The other AC games worked perfectly out of the box with NV Surround (and I presume Eyefinity) but this is really frustrating with AC3.

There are some MAJOR problems with the game in NV Surround that I'm going to post in another thread (with video) so hopefully someone can help.

The game by itself looks amazing and to not be able to enjoy it to the fullest is disappointing but hopefully it will be fixed soon enough.

I disabled crossfire in CCC as well. But the game is still showing up in the middle screen. Left and Right monitors are still dark with 5760x1080p

My setup:
2x 6950 (flashed to 6970)

Connections
Monitor 1 --- 1st 6950 dvi
Monitor 2 --- 1st 6950 dvi
Monitor 3 --- 1st 6950 Active MiniDisplay Adapter.

My eyefinity does work for CoD Black Ops with Widescreenfixer enabled. So I think the prob is with the game.

Any suggestions on what I can try?
