In my BIOS I have the topology set to m.2 for the NVMe SSDs but for the HDD it says unknown,

here are the available options, shall I leave it as unknown or shall I choose one of the following?

Can someone please explain what these different topologies are?

 
I would set it to m2

I believe those settings basically tell the OS what kind of drive it is and use it accordingly.

What board do you have? Have you read the manual?

Yes, reading the manual is a common practice these days.

The manual won't have these settings since the stock BIOS is locked and has nothing to configure, just the date/time/ UEFI boot

This is an unlocked BIOS

Now the m.2 SSDs are already set to M2 topology, I was wondering what topology to set for my two Samsung Spinpoint 2TB HDDs? It is currently set to unknown and I certainly don't think M2 would be suited for a regular SATA HDD

I agree. Though, if the drive has an issue, put into iSATA mode. This is for "integrated SATA".
