How come some SSDs have 256 while others have only 240??

And they are of same price.

Why would anyone buy a drive 16gb less capacity??? What's the advantage of 240 gb dirve?

They actually have the same amount of NAND.

However, some companies choose to over-provision to ensure SSD performance.

Basically, even if you have a 256GB SSD... you should never fill it to 256GB. The most you should put on it is around 240-245GB to ensure consistent performance.

More like 230GB really (I think the general recommendation is 10-25%). Personally, I try to leave 20% free (based on total NAND capacity) so that's around 100GiB formatted capacity per 128GiB NAND.

It depends on what you're doing with the drive.

SandForce is a bit of a special case. Thanks to compression, SF SSDs have more spare area to play with. I reckon if Anand had tested the Intel 330 a while longer, we'd see worse performance degradation as the NAND gets filled up.
