Hi there! I bought recently this RAM: F4-3000C16D-16GTZR.

I will pair them with ASRock Z370 Taichi and 8086k.

Can I OC them manually for better results or should I stick with XMP?

If I remember correctly Intel doesn't get much of a boost for memory speeds past 3000-3200MHz. I would probably just use XMP unless you want to tinker with things.

I'll soon have a similar kit, F4-3000C16D-32GTZR (16 GB sticks, Hynix I think). What would be a good target for timings/voltage if I just want to OC it to 3200 and call it good? I'm guessing it will probably still run with the stock 16-18-18-38 timings at 3200, but what should I start adjusting if I want to do better?

Apologies for the dumb questions, this is the first PC I've built in probably 10 years so a lot has changed.

Every part OCing differently hasn't changed. Try it yourself and find out. No one can give you magic settings that will work.
